Description
Paper regarding how to make maple sugar from the juice of the upland maple or maple trees that grow in the highlands. Dudley describes the process of extracting sap from the tree, boiling the sap until it becomes thick like treacle, removing it from the flame and stirring beef suet through the sugar prevent it hardening.
